Burrito Pie

This burrito pie is the BEST EVER.


1 lb lean ground beef
1/2 onion, chopped
1 tsp minced garlic
1 can sliced black olives (2oz)
1/2 can diced green chili peppers (4oz)
1/2 can diced tomatoes with green chili peppers (10oz) (I used the whole can)
1/2 jar taco sauce (16 oz)
1 can fat-free refried beans (16oz)
6 flour tortillas
1 pkg shredded colby jack cheese

Preheat oven to 350 degrees. In a large skillet over medium-high heat, saute ground beef for 5 min. Add onion and garlic, saute for 5 more min. Mix in olives, green chili peppers, tomatoes w/ green chili peppers, taco sauce, and refried beans. Stir mixture thoroughly, reduce heat to low, and let simmer 15-20 min. Spread a thin layer of meat mixture in the bottom of a 9x13 casserole dish. Cover with a layer of tortillas, then a thin layer of cheese. Repeat - thin layer of meat mixture, layer of tortillas, then last very thin layer of meat mixture, followed by a heavier layer of cheese. Bake for 20-30 min, or until cheese is bubbly and brown.
