Baked Zucchini Fries with Sriracha Lime Mayo

These were amazing. I feel like I need to make them once a week. I guess I could since my mom has an abundance of zucchini in her garden. We really liked the kick the hot Sriracha gave the sauce. Must try!!


Fries:
zucchini (I had about 8 small ones)
2 tbsp flour
2 eggs
1 tbsp water
1 c Panko bread crumbs
1/4 c grated Parmesan cheese
1/2 tsp salt, garlic powder, each
1/4 tsp cayenne pepper

Mayo:
6 tbsp lite mayo
3 tsp Sriracha sauce
2 tsp lime juice

Depending on the size of your zucchini, you can cut it length-wise into quarters. I also cut some in half first and then cut the halves into quarters. Doesn't really matter... delicious either way.

Preheat oven to 425. Line a baking sheet with aluminum foil and place a wire rack on top of it. In one bowl, mix Panko, cheese, salt, garlic powder, and cayenne pepper. In a diffent bowl, whisk together 2 eggs with 1 tbsp water. Put all your zucchini pieces into a big ziploc and sprinkle 2 tbsp of flour in. Seal bag and shake, coating all the zucchini.

One at a time, dip each flour-covered fry into the egg, then into the bread crumb mixture. Carefully place on wire rack. Do this with remaining zucchini, then bake for 20 min. To make the sauce, just mix all ingredients together!

Slow-Cooker Cubed Steak and Gravy

I have never cooked with cubed steak before, but this recipe said it would make "this tough cut of meat melt in your mouth." So when I went to the store, right next to the cubed steak was something that looked exactly the same, but sirloin. I think the label said top round sirloin tenderized. So I got that, only because it looked a little better. But anyway, this recipe would be good with either I'm sure. Yum!!


1 lb cubed steak
flour for breading
3 tbsp canola oil
1/2 c diced onions
1 c sliced mushrooms
3 c water, divided
3 envelopes of gravy (I used brown, onion, and mushroom)

Heat oil in a large pan. Roll cubed steak in flour. Brown steak on both sides. You don't have to cook it completely, just sear it. Put onions in the crock pot, followed by the steak, and then the mushrooms. Cover this with 2 cups of water. Cook on Low 8 hours. Half an hour before serving, mix the 3 gravy packs with 1 c of water and add to crock pot. Let cook 30 more min until the gravy has thickened. Fix with mashed potatoes!

Cashew Chicken Lettuce Wraps

Uh oh! It's summer and I have all the time in the world to cook! Tried out this lettuce wraps recipe today and they taste like something you'd get at a restaurant for sure. Mmm.


For the stir-fry sauce:
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp brown sugar
1/4 tsp ground red pepper
1/4 tsp ground ginger
1 tsp sesame oil

For the cashew chicken:
About 3/4 lb chicken breasts, diced
About 8 leaves of lettuce
3 tbsp canola oil
1 c onion, diced
2 garlic cloves, minced
1 tsp soy sauce
1/4 c cashews, chopped
1/4 c chopped green onions

First, whisk all ingredients for the stir-fry sauce together, making sure to dissolve brown sugar, and set aside. Heat canola oil in a pan over medium-high heat. Add diced chicken and brown (about 4-5 min). Remove chicken brown the oil, then add onions, garlic, and 1 tsp of soy sauce to pan. When the onions and garlic are brown and tender, add the stir-fry sauce, browned chicken, and cashews. Saute mixture for a few more minutes and remove from heat. Sprinkle green onions into pan and stir. Spoon chicken mixture into lettuce leaves and enjoy!

Bubble Up Enchiladas

I can't say enough good things about this recipe . So easy and so delicious. I added diced onion and it made it even better. It's also a Weight Watchers recipe! You have to try this. It's really not even an option.


1 lb ground turkey
1 onion, diced
1 can enchilada sauce (10 oz)
1 can tomato sauce (8 oz)
1 can red-fat refrigerated biscuits
1/4 c shredded low-fat Mexican cheese

Preheat oven to 350 degrees. Brown the ground turkey and cook diced onions along with it. Drain the juices, and pour enchilada sauce and tomato sauce into the pan and stir. Cut biscuits into fourths and add to mixture, stirring well. Pour into a 9x13" dish and bake for 25 minutes. Sprinkle cheese on top and bake for an additional 10 min. Let cool 5 minutes and enjoy!!!

Beef Tips in Wine Sauce

I haven't posted in a while - the end of school is busy. Anyway, I tried this recipe a couple weeks ago and it was so good. Will finished off the leftovers later that night after he got home from band practice.


1/2 c flour
1 tsp salt
1/4 tsp pepper
beef sirloin tips (2-3 lbs)
1 c chopped green onions
1/2 lb fresh mushrooms, sliced
1 can condensed beef broth
1 tsp Worcestershire sauce
2 tsp tomato paste
1/2 c dry red wine
3 tbsp flour

In a large bowl, combine 1/2 c flour with salt and pepper. Toss beef cubes in mixture to coat thoroughly, and put them in the crock pot. Then, in a large bowl, whisk together the beef broth, Worcestershire sauce, and tomato paste. Add green onions and mushrooms and stir. Pour over the beef tips in the crock pot and stir. Cover and cook on Low 7-8 hours. One hour before serving, turn crock pot to High. Make a smooth paste with the red wine and 3 tbsp flour. Stir into crock pot and mix well. I served this over egg noodles. YUM!
