Spicy Thai Chicken Noodles

Whoa! One of my new favorite recipes for sure! Will and I both thought this dish was one of the best things we've ever tasted. The original recipe didn't call for chicken, but I added it to make it a meal, mostly for Will.



2-3 c cooked chicken, cut into cubes
1-2 tbsp crushed red pepper
1/4 c vegetable oil
1/2 c sesame oil
6 tbsp honey
6 tbsp lite soy sauce
1 pkg linguine, cooked
1/2 c sliced green onions
2 whole carrots, peeled and shredded
2 tbsp cilantro
1/2 c slivered almonds (or peanuts)

The spice level is up to you. I used 1 (large) tbsp of crushed red pepper and it was perfect for us, and Will likes spice. Ok, so combine crushed red pepper, veg oil, and sesame oil in a pan. Cook over medium heat for 2-3 min. Strain out the pepper, and reserve the oil. Whisk honey and soy sauce together with the oil. Combine cooked linguine and chicken with sauce and stir together until everything is well coated. Stir shredded carrots to mixture. Serve in a bowl and sprinkle green onions, cilantro, and chopped nuts - I used almonds because that was all I had and it was still tasty. SO DELICIOUS.
