Coconut Chicken with Sweet Chili Sauce

This was so good! We felt like we were eating something from a restaurant.


boneless, skinless chicken breasts, cut into thin slices, diagonally
(I bought thinly sliced chicken breasts & cut into 5 strips a piece)
2 eggs
1/4 c lite coconut milk
1/2 c flour
1 c Panko bread crumbs
1 c shredded coconut
1/2 tsp salt
1/2 c oil, divided
Sweet chili sauce for dipping!

Prepare 3 bowls for the breading. One bowl with the flour and salt, another with the eggs and coconut milk (whisked together), and the third with the Panko bread crumbs and coconut stirred together. Put 1/4 c vegetable in a large heavy duty skillet. Heat over medium-high until just below smoking. While the oil is heating up, dredge all the chicken strips. Dip all the strips in the flour first, then go back and dip each one in the eggs and then coconut mixture. Place about 6 strips in the pan at once, and let cook about 2 min per side, or until golden-brown and crispy. Put on a paper towel on a plate to soak up some oil. After a couple batches, add more oil. Serve with sweet chili dipping sauce. DELICIOUS!

Slow-Cooker Cranberry Roast

So I was a little skeptical when I first came across this recipe. I thought, "Hmmm cranberry and beef... I don't know..." But then, I was pulled in by the fact that it's super easy with only 3 ingredients. Plus, reviews of the recipe were great. They were right - this was so yummy. A slight sweet flavor to the gravy, which is delicious. Serve it with mashed potatoes because the gravy is tasty on them.



2-3 lb round roast
1 packet dry onion soup mix
1 jar jellied cranberry sauce

Put the onion soup mix in the crock pot, then the meat, then the cranberry sauce! Cook for 8-9 hours on Low. That's it! Super easy and super delicious.

Ramen Noodle Salad

ONE OF MY FAVORITE THINGS EVER - Ramen Noodle Salad! My mom gave me this recipe, and it actually called for 1 bag of cole slaw, and 1 bag of broccoli slaw. Kroger was out of broccoli slaw, so I just used 2 bags of cole slaw and didn't even notice a difference. Mmmmm!



Mix together in a large bowl:
2 bags cole slaw
1/2 c sliced almonds
1 c sunflower seeds
1 bunch green onions, chopped
2 pkgs beef flavored ramen noodles (hold seasoning packets for marinade)

Marinade:
2 seasoning packets from ramen noodles
1/2 c olive oil
1/2 c sugar
1/3 c wine vinegar
2 tbsp light soy sauce

Cajun Meatloaf

This is really good! We liked the spicy kick this meatloaf had. A nice change from regular meatloaf.


1.5-2 lbs lean ground beef
1 bell pepper (any color), diced
1 whole onion, diced
2 stalks celery, sliced
4 cloves garlic, minced
2 eggs
3 tbsp butter
1-2 c bread crumbs
1/2 tsp ground nutmeg
1/2 tsp black pepper
1/2 tsp cayenne pepper
1 tbsp Worcestershire sauce
1/2 c milk
2 c ketchup
2 tbsp honey
hot sauce

Dice bell pepper, onion, and celery. In a large pan, over medium-high heat, melt 3 tbsp butter. Add diced veggies, plus 4 cloves minced garlic and about 1/2 tbsp salt. Let cook for a few minutes, then add 1 tbsp Worcestershire sauce, and 1/2 tsp nutmeg, pepper, and cayenne pepper, each. Depending on how hot you like it, add a few shakes of hot sauce. Next, add 1/2 c ketchup - cook and stir for a few more minutes. Remove from heat and let cool for several minutes. Then add 1/2 c milk and at least 1 cup of breadcrumbs. Stir the mixture until it's a nice, thick paste.

Place ground beef in a large bowl. Whisk 2 eggs together and add to meat. Then add the Cajun veggie mixture. With clean hands, mix everything together really well. Line a cooking pan with foil and spray with cooking spray. Mold meat mixture into a loaf - it should be kind of flat and wide. About 1 1/2" tall. In a small bowl, mix together 1 c ketchup and 2 tbsp honey. Slather on top of loaf. Bake at 400 degrees for 40-50 min.
